Xylitol: The high concentration of xylitol (about 99.5%) - unlike conventional 'acidic' sugars, is alkaline and neutralizes harmful acids in the mouth that would attack the enamel. In addition, the conventional sugar of the food is replaced by the xylitol, which caries bacteria find no food.
