Do you have any New Year customs that you like to practise? We like to bake New Year's pretzels without added sugar.
This tradition dates back to the Middle Ages. Here, the pretzel was a lucky charm against illness and hunger.
With its shape without beginning or end, it also symbolises infinity.

 

Our recipe for a large New Year's pretzel (Bavarian: Brezn) is a classic yeast dough. Only we have replaced the sugar once again. This time - surprise - with stevia. As xylitol and erythritol are not suitable for yeast doughs, stevia is ideal here. A wonderful sweetener that I wouldn't want to be without in our kitchen!

 

 

 

 

Crumble the yeast, mix with the stevia and lukewarm milk.
Place the flour in a bowl and make a well in the centre.
Add the yeast milk, egg and œ teaspoon of salt and knead everything into a smooth dough for 2 minutes using the dough hook on a hand mixer. Add the butter and knead thoroughly at high speed for approx. 5 minutes.
Cover the dough and leave to rise in a warm place for 1 hour.
Shape the dough into a large pretzel
Bake for 30-40 minutes at 180g. Bake the pretzel until golden brown.

 

Now each family member can eat a large piece of pretzel.
