Recipes with XYLIPUR® birch sugar

General information: It is not difficult to sweeten food and drinks with XYLIPUR birch sugar

In contrast to stevia, XYLIPUR® birch sugar is pretty much comparable to conventional sugar. The sweetening power is 1:1 for both. This makes dosing much easier than with artificial sweeteners.

A few special features of xylitol should not go unmentioned when baking, cooking and preparing drinks:

Xylitol has significantly (40%) fewer calories than sugar
Xylitol can be substituted 1:1 with refined conventional sugar.
Xylitol is easily soluble in water.
Xylitol does not have a negative metallic aftertaste like artificial sweeteners
Xylitol doesn't taste like liquorice like stevia
Xylitol has a slightly cooling and refreshing effect when consumed
Xylitol has no driving effect on yeast. Thus, leavening agents must be added to yeast dough, or some sugar to activate the yeast.

Note on the tolerance of xylitol: In the beginning, it is advantageous to try out your personal tolerance. Xylitol is somewhat hydrophilic - also in the intestine. This can have a laxative effect on an individual basis or cause tingling in the stomach. Higher doses of xylitol are used in the kitchen in particular than, for example, in dental care. It should be taken into account that when baking a cake, several hundred grams of xylitol may be added to the dough. Maybe start with smaller doses or mix with sugar? Increasing the xylitol content is always possible.

In the following, we will briefly put together recipes that will make it easier for you to get started in the world of xylitol cooking. Here are a few easy recipes to get you started:

240g flour
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon salt
90g 100% cocoa powder
120g semi-sweet chocolate, finely chopped

In a bowl we mix the flour, salt and the baking powder and add the remaining dry ingredients and the butter. Mix everything very well. We add the vanilla and the two eggs to this batter. Again we mix everything very well until all the ingredients are well combined. Now all you have to do is put the dough on the baking sheet. There are no limits to creativity here. It is only important that the sheet is well greased beforehand.

Now finish baking at 180-200°. Bon appetit!
